While its shape pays homage to Tallegio, this washed rind cheese has a tangy, long finish and supple texture that are all its own. Creamy and subtly pungent, aromas of damp earth and bread pair with a flavor profile that is milky sweet and savory.
  • Romano Cheese Raw Sheeps Milk cheese aged 9 months from Cuenca, Spain. This cave-aged manchego style cheese is hand-rubbed in Iberico lard and fresh rosemary. Its caramel nuttiness and pleasant gaminess are complimented by an herbaceous rosemary note. It is firmly textured with balanced salinity and agreeable sharpness.
  • Bay Blue Cheese Cow’s Milk cheese aged 3-4 months from Point Reyes, California. With a pronounced sweetness and a fudgey, toothsome texture reminiscient of Stilton, this aged blue cheese is very approachable.
