Ayam bakar ??? literally means "rotisserie chicken" in Malaysia and Indonesia. This ayam bakar recipe comes from my hometown Cameron Highland, also known as Pahang. It uses a lot of herbs, including the beloved Javanese duo of bay leaves and galangal. The flavor is rich and savory, and it?s slightly sweet from the palm sugar and sweet soy sauce. The herbs make the chicken quite aromatic. Served with chicken flavored rice, garnished with nyonya acar (pickled) and fresh dipping chili garlic sauce.
